Herby Quinoa Burgers



quinoa burgers3 cups of cooked Quinoa ( prepared according to instructions on side of packet)

4 eggs
1 and a half teaspoons of salt
Half a teaspoon black pepper
4 cloves garlic finely chopped
One cup chopped rocket (optional)
Half a cup finely chopped spring onions (optional)
Half a cup chopped chives (optional)
4 eggs
One cup cornflake crumbs
One small tin of sweetcorn (optional)

Combine all ingredients in a large mixing bowl.

Using a griddle pan, heat three tablespoons of oil on medium heat.  Form mixture into burger shapes and griddle for approx. 3 mins on each side until burgers are  golden brown and start to turn crispy.

Makes approx 12 burgers.

Serve with smoky mayo:

Mix half a cup mayo with 1/2 tsp smoky paprika, 3 tbsp. lemon juice and 2 tsp chopped garlic.
