Salmon Vegetable Parcels (with Nutrition by Sylvie)
Ingredients:
1 fillet of salmon
Herbamare, salt, pepper
Olive oil
Lemon zest of lemon
Fresh thyme and chives
¼ fresh garlic
1 courgette
1 carrot
½ spring onion
Method:
Season the salmon with herbamere, salt and pepper, olive oil and lemon zest.
Add finely peeled strips of courgette and carrots, spring onion, chives and thyme.
Wrap up the salmon with the vegetables in baking paper to make a tightly sealed parcel.
Place in oven at 190C for 25 mins
Sauce:
Organic natural yogurt
Flaxseed oil
Chives
Herbamare
Mix all together and serve on side as a healthy alternative to mayonnaise.
